We begin this week of October 2 to do tests and tastings to find out the best time to start the harvesting and production campaign of our first early hasvest olive oils!
The weather conditions have been and currently are very harsh this year, and our olive trees have suffered. But after a lot of effort and, even with not too much olive fruit, they are prepared to offer us the best of themselves.
We analyze two elements in the laboratory: on the one hand, the chemical qualities of the olives – to know its level of maturity and obtain the maximum of its healthy properties – and, on the other, we do a sensory tasting to know if it is the perfect time to extract all the flavor and aroma we want to obtain.
