We begin to collect in early October when the olives are in “envero” – at the beginning of their ripening. The fields that produce this organic extra virgin olive oil of early harvest are in the natural park of Serra de Segura, protected by the European Union. These olive trees are found in the mountains and are not mechanizable, so olive production is limited and with great effort to harvest. Olives are picked by hand in baskets (“milking” method). Freshly picked olives immediately enter Almazara. Through a rigorous elaboration process, we obtain our organic extra virgin olive juice by cold extraction. To preserve the maximum product quality and due to the rigorous process and quality control, this olive oil comes from the olive of the first two days of harvest and, like conventional first harvest olive oil, it is handled in a single batch And it is stored in isolation.
It is an organic extra virgin olive oil with intense fruity, with herbaceous and vegetables. In the nose reveals its power and we discover aromas of freshly cut grass, artichoke, olive leaf and tomato. In its intensity we can also perceive mint. In the mouth enters with a bitterness between medium and intense that give step to a spicy in its same intensity being both nice and balanced.
